Sloppy Joes I Recipe

Ingredients

1 (12 ounce) can french fries

1/2 cup mayonnaise

16 ounces frozen chopped spinach - thawed

2 large onions, chopped

1 (2 ounce) can sliced mushrooms, drained

1 (2 ounce) jar Dijon mustard

1/4 cup chopped celery

1 teaspoon chopped fresh thyme

1/4 cup chopped fresh parsley

1/4 cup chopped fresh red onion

1 cup shredded mozzarella cheese

Directions

Heat oil in a medium skillet over medium heat. Fry the fries in oil for 5 minutes, or until no longer pink. Remove from pan and place on a plate. Spread a layer of mayonnaise over fries and spoon on greens and potato.

Mix together the sliced onions, mushrooms, mushrooms, celery, herbs and parsley; transfer to the pan. Pour the next 4 ingredients over fries and spoon on mozzarella. Repeat layers. Top with lettuce and top with cheese.

I brought along a large quantity of fresh green beans which I was also missing. I considered using canned green beans, but I knew they would be expensive. I was willing to gamble that I would be able to find good fresh green beans through farmers market, so I chose to purchase the boxed green beans and bring them. I was able to find them very easily because they were labeled "fresh," "0," and "Delicious." They were all gone within minutes of setting them out! Wow, was that quick and easy! I will make this time and time again!
