Vegetarian Chili Recipe

Ingredients

1 tsp olive oil

1 1/3 cloves garlic, crushed

1 teaspoon crushed salt

2 teaspoons black pepper

3 stalks celery, finely sliced

3 stalks celery, thinly sliced

4 cloves garlic, crushed

1 (3 pound) can mushrooms, drained and flaked

3 tablespoons chili powder

5 tablespoons fresh lime juice

salt and pepper to taste

1/2 cup shredded mozzarella cheese

Directions

In a medium saucepan over medium heat, heat olive oil and toss all but 2 teaspoons garlic and salt. Cook for 5 minutes, stirring constantly. Slowly whisk in the crushed garlic and 1 teaspoon chili powder. Lower heat to medium and stir in celery and celery slices. Reduce heat to low and slowly stir in the mushrooms, carrots, caramelized cheese, salt and pepper. Bring to a boil, stirring constantly. Be gentle when stirring.

Stir the celery and celery slices into the vegetable mixture, stirring constantly, just enough to dissolve. Mix in mushrooms, carrots, celery salt, chili powder and mozzarella cheese. Serve.
