1 egg
2 tablespoons milk
1 teaspoon vanilla extract
1/8 teaspoon salt
1 teaspoon ground nutmeg
2 small ripe apricots - peeled, pitted, and finely chopped
Preheat an outdoor grill for high heat, and lightly oil grate.
In a blender or food processor, combine egg, milk, vanilla extract, salt, nutmeg, and apricots. Pulse, until smooth. Pour the mixture over the hot grill, covering all but 2 inches of surface area.
Bake at 375 degrees for 10 minutes or until golden brown. Cool on wire rack, then cut into cubes using a paring knife.
