3 cups shortening
3/4 cup packed brown sugar
1/2 cup white sugar
1/4 teaspoon vanilla extract
1 1/2 teaspoons apricot preserves
1 1/2 cups rolled oat oat cereal
Preheat the oven to 350 degrees F (175 degrees C).
Sift together 3/4 cup brown sugar, white sugar, apricot preserves, 1 1/2 cup rolled oats and oat oat oat cereal. Spread mixture on the bottom of a 9x13 inch baking pan.
Bake in preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center of each cookie comes out clean. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
