1 (4 pound) whole chicken, cut into cubes
1 cup boiling water
3 tablespoons lemon juice
1 tablespoon celery juice (optional)
Place chicken cubes and water in resealable plastic bags.
Preheat oven to 350 degrees F (175 degrees C).
Place chicken cubes in a medium baking dish and sprinkle them with lemon juice.
Cook chicken in a large skillet over medium heat for about 5 minutes or until chicken is no longer pink and juices run clear. Transfer to a serving bowl.
*Note: Set the baking sheet in the center to keep the pan from flooding.
Place chicken cubes on the baking sheet, cut in half, leaving 1/2 inch slices. Sprinkle with celery juice and bake an hour in the preheated oven.
