Chicken Pancakes Recipe

Ingredients

1/2 cup butter, softened

2 eggs, beaten

1 tablespoon vegetable oil

1 tablespoon vegetable oil

1/2 cup cooked, cubed chicken

1 (2 pound) whole chicken, cubed

1 pound ribs

Directions

Preheat a lightly oiled griddle or frying pan over medium heat.

Place butter in a large bowl. Mix in eggs, oil, chicken and chicken, then mix in the broccoli and onion. Pour chicken mixture into griddle, using about 1/4 cup for each side.

Bake in preheated griddle until golden brown, about 10 minutes. Flip chicken over and continue cooking until chicken is no longer pink, about 6 to 8 minutes. Drain.

Meanwhile, preheat oven to 400 degrees F (200 degrees C).

Place chicken in a large skillet over medium heat. Add oil, and fry for about 5 minutes on each side, or until chicken is browned, about 5 minutes. Transfer to a 9x13 inch baking dish. Add broccoli and onion; spoon onto each chicken breast. Add chicken bones and skin on top of chicken. Top with chicken breasts, bacon, onion, green bell pepper, sugar, and coriander. Sprinkle maraschino cherries over chicken and spoon over the top.

Bake chicken uncovered in preheated oven for 45 minutes, turning once, until chicken is cooked through and juices run clear. Remove from oven and sprinkle with sugar and coriander. Serve chicken with toast.
