2 medium zucchini
1 medium onion, diced
1 large carrot, finely diced
1 medium tomato
1 cup vegetable oil
1 teaspoon salt
1/2 teaspoon dried thyme
1 tablespoon dried oregano
1/4 teaspoon dried basil
1/8 teaspoon lemon juice
2/3 cup white vinegar
2 teaspoons lemon zest
Preheat grill for high heat.
Place zucchini to desired thickness and cut into 1/2 inch slices. Shred slices into 1/2 inch slices and return to pan.
In a medium bowl, stir together onion, carrot, tomato, oil, salt, thyme, oregano, basil, lemon juice, vinegar and lemon zest. Pour over zucchini slices and toss together to coat. Place on grill.
Broil 5 minutes on each side until golden. Cool in pan on wire rack or on broiler rack until set. Serve hot or cold.
