1 pound bacon
1 (16 ounce) can Italian-style diced tomatoes with juice
1 (8 ounce) package cream cheese, softened
1 cup mayonnaise
1 tablespoon dried parsley
Preheat oven to 350 degrees F (175 degrees C).
Place bacon in a large, deep skillet. Cook over medium heat until evenly brown. Drain grease, crumble and set aside.
Grease an 8x8 inch baking dish with vegetable oil. Place bacon in a large, deep skillet, and fry 5 to 6 minutes on each side or until crisp and evenly brown. Remove from skillet. Drain grease, crumble and set aside.
Mix cream cheese, mayonnaise, parsley and diced tomatoes in a small bowl. Pour mixture over the bacon.
Bake in preheated oven for 30 minutes or until bacon is crispy and sweet.
