2 tablespoons butter
1 tablespoon white sugar
1 teaspoon vanilla extract
2 1/2 pounds potatoes, peeled and cubed
6 tablespoons all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup chopped celery
1/4 cup sliced walnuts
Preheat oven to 375 degrees F (190 degrees C). Grease a 4 quart casserole dish or 9x13 inch dish dish.
In a medium-size saucepan, combine butter, sugar, vanilla, celery, walnuts, cherries, and potatoes. Cook over medium-high heat, stirring constantly, until butter is completely melted and mixture is thickened.
Pour in the flour, baking powder and salt; mix well. Pour over potatoes, and allow to boil for 5 minutes. Remove from heat; stir in celery mixture.
Bake at 375 degrees F (190 degrees C).
