2 jalapeno pepper slices
2 tablespoons chopped fresh parsley
salt and pepper to taste
1 (10 ounce) package frozen mixed vegetables mixture
1 (4 ounce) can crushed pineapple with juice
1 cup sliced fresh mushrooms
6 tomato slices
1 onion slice
1 (4 ounce) can cream cheese, softened
1 (8 ounce) can cream of mushroom soup
1 cup shredded Cheddar cheese
1 (8 ounce) package shredded mozzarella cheese
In a medium bowl, mix jalapeno pepper slices, parsley, salt and pepper. Place the mixed vegetables mixture in the bottom of a large casserole dish.
Layer the pineapple with mushrooms, tomato slices, onions and cream cheese. Layer the cream cheese, mozzarella cheese and Cheddar cheese. Sprinkle cream cheese with shredded mozzarella cheese. Serve immediately.
