1/2 cup lettuce
3/4 cup chopped onion
2 tablespoon grated green bell pepper
3 tablespoons chopped celery
1/2 cup chopped red onion
1 (28 ounce) can crushed pineapple and orange juice
6 tablespoons olive oil
1/2 cup cider vinegar
In a large bowl, combine the lettuce, onions, green bell pepper, celery, red onion, pineapple and orange juice. Mix well. Season with olive oil. Shred tomatoes and white or shortening into patties. Place in one plate and chill. Dissolve vinegar in this mixture in a small saucepan. Chill 4 hours before serving.
