Amaretto Chocolate Cream on the Go Recipe

Ingredients

1 (9 inch) half cup white sugar

1 1/2 cups light cornflakes cereal, chips or meal will be fine

1/4 cup butter, softened

1/4 cup vodka

3/4 cup light rum

4 egg whites

3 egg yolks

2 cups heavy whipping cream

1/3 cup apricot preserves

3/4 cup crushed coconut

Directions

Preheat oven to 350 degrees F (175 degrees C).

In a 2 quart measuring cup combine sugar, cornstarch and margarine. Whisk in lime juice, vodka and rum.

In a small mixing bowl combine egg whites and lemon juice. Add egg yolk to cornstarch mixture and whisk until mixture thickens, about 1 minute.

Divide batter in half and pour into pastry shell. Arrange the entire mixture on an 7x11 baking sheet.

Bake in preheated oven 5 minutes, until lightly browned.

Insert knife or wooden pick tip into pastry to loosen. Flip and bake until set, about 30 minutes.
