Grilled Chicken with Fresh Lemon Tilapia Recipe

Ingredients

1 (8 ounce) can sliced mushrooms, drained

1 onion, diced

10 fresh tomatoes, diced

4 cloves garlic, minced

1 teaspoon dried basil

1/2 teaspoon salt

1/2 teaspoon dried rosemary leaves

Directions

Preheat grill for high heat and lightly oil grate.

In a large bowl, mix mushrooms, onion, tomatoes, garlic, basil, salt, rosemary and salt. Stuff each breast with mushrooms mixture. Place fish in prepared pan and brush lightly with lemon juice.

Place pan on grill. Grill 4 to 6 minutes per side, or until fish flakes easily with a fork.

Experimented with lemon by weight instead of soda. Made slight changes (added garlic powder, onion powder, oregano, basil). I would recommend going light on the soda as there was a slight sweetness to it. However, I would go as light as you can get without destroying the delicate texture of the Brussels sprouts. These are great for summer lunch and dinner!
