Dijon-Style Casserole Recipe

Ingredients

1 recipe pastry for a 9 inch double crust pie

1 pound shredded Cheddar cheese

3 large onions, quartered

12 ounces Dijon mustard

4 tablespoons butter

2 (8 ounce) cans crushed saltine crackers

1/3 cup olive oil

8 green onions, chopped

Directions

Preheat oven to 375 degrees F (190 degrees C). Lightly grease 9x13 inch baking dish. Cook the diced cheese until very crisp. Drain excess liquid in a medium saucepan. Mix crushed crackers, saltine crackers and olive oil in small bowl. Drop by rounded spoonfuls of cheese mixture onto cream cheese layer. Using hands, shape cheese halves into globes. Rub remaining cream cheese mixture into sides of remaining cheeses.

Bake at 375 degrees F (190 degrees C) for 28 minutes, or until knife inserted into center of pie comes out clean. Top with green onions and spread with crackers mixture. Cool to room temperature. Garnish as desired.
