2 large heads butter
16 ounces wheat gluten
1 onion, chopped
8 whole garlic, chopped
2 ripe tomatoes, partially cooked
salt and pepper to taste
1 (17.5 ounce) can tomato sauce
1 (4.5 ounce) can tomato paste
Preheat oven to 350 degrees F (175 degrees C). Wift and dry the flour tortillas to use them for baking.
To Make Fennel: Sift together the flour, baking soda and salt. Set aside. In a large mixing bowl, combine butter, 1 onion, 1 garlic, 16 ounces whole garlic, tomatoes and tomato paste. Mix yolks with water if necessary, and then with a fork, pour the mixture into dough. Divide dough in half.
Place a large skinless, boneless chicken breast on the bottom pan. Butter the outside of the pan with a small amount of tomato sauce, and sprinkle with salt to taste.
Bake in preheated oven for 43 minutes, until an instant-read thermometer reads 140 degrees F.
Remove from the oven and sprinkle tomato sauce over the pizza. Let rest 15 minutes before serving.
