1/4 cup butter
1/2 cup all-purpose flour
1 teaspoon baking powder
2 egg yolks
1 1/2 cups milk
1 teaspoon vanilla extract
1/3 cup finely minced nutmeg
1/2 cup chopped pistachio
Preheat oven to 350 degrees F (175 degrees C).
In a medium saucepan, heat butter. Remove from heat. Stir the flour into the butter mixture and let cool just enough to stir.
In a small saucepan, beat egg yolks until foamy. In a large bowl, beat milk, vanilla and nutmeg. Stir the chocolate mixture into the yolk mixture just until incorporated.
Stir pistachio into the whipping cream mixture only 5 minutes after the last cream is added. Whisk until smooth and the pistachio powder is set. Pour into 9 pie shells (belly up).
Bake in preheated oven for 30 to 40 minutes, or until toothpick inserted in center comes out clean.
