3 teaspoons salt
1 cup water
2 tablespoons unsalted butter
1 pound russet potatoes
1 teaspoon Italian seasoning
In a medium saucepan or saucepan, stir salt, water, butter and potatoes together. Bring mixture to a boil, stirring until fluffy.
Meanwhile, in a small bowl, mix Italian seasoning and 1/8 cup of butter or margarine with a spoon. Blend butter mixture into potatoes and toss with crushed tomato mixture.
Place crockpot over high heat. Add water, chicken, potatoes, onion and spices to the saucepan. Cover and reduce heat to medium-low. Bring mixture to a boil. Reduce heat to medium-low, and cook 5 minutes.
Stir mixture into a crockpot along with 1/4 cup Parmesan cheese. Serve hot.
