1/2 cup butter
1/2 cup white sugar
1 tablespoon rum
1/4 teaspoon vanilla extract
1/8 teaspoon almond extract
1 1/2 cups bread flour
1 teaspoon baking powder
3 tablespoons cocoa powder
2 tablespoons cold milk (optional)
1 cup chopped almonds
1 cup sliced fresh strawberries
Preheat oven to 275 degrees F (135 degrees C). Grease cookie sheets.
In a large bowl, cream together the butter, sugar and rum until smooth. Beat in the vanilla and almond extracts. Combine banana slices and shake to coat. Cut into 1/8 inch pieces.
Place banana slices on the prepared cookie sheet. Dip them in the milk, then sprinkle on the flour, baking powder, cocoa. Repeat with remaining bananas. Dust on the chocolate pieces.
Bake in preheated oven for 1 hour and 10 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Cool loaf for 10 minutes, then remove from cookie sheet. Cool completely. Decorate with strawberries, nuts and fruit.
