Blanched Whole Chicken, Shredded and Shredded Cheese Recipe

Ingredients

1 1/2 cups chopped onions

2 cups chopped celery

5 pounds whole chicken, cut into cubes

5 cups shredded Cheddar cheese

6 slices bacon

1/2 cup butter, melted

Directions

Place the onion, celery and water into a large mixing bowl. Add salt to taste. Mix thoroughly.

Season chicken cubes with salt, pepper and seasonings. Place cubes in a large glass dish, to cover. Pour cheese over cubes and coat well. Place bacon within inch of flat side of dish.

Heat a nonstick skillet over medium-high heat. Add chicken cubes and spread fry for 5 minutes on each side, or until golden brown. Flip chicken over and reserve skin.

Meanwhile, drizzle melted butter on bacon cubes and place on toast. Cook over medium heat until golden brown. Drain grease in pan. Serve chicken over cooked side of butter sandwich.
