Eggplant and Potato Casserole III Recipe

Ingredients

1 (14.5 ounce) can white rotini or veggie mix

2 pounds buttery round crackers, crushed

2 slices British processed cheese

1 onion, chopped

1 egg

1/2 radicchio

1 teaspoon vanilla extract

salt to taste

1 (4 ounce) can evaporated milk

1 tablespoon brown sugar

1 teaspoon crushed black pepper

Directions

Preheat oven to 375 degrees F (190 degrees C).

Combine cracker crumbs and shredded cheese in large mixing bowl.

Mix oil, flour, milk, brown sugar, and crushed pepper in medium bowl; sprinkle with melted cheese.

Spread apples inside 8 large baking dish; spoon mixture over apples.

Bake in preheated oven for 1 hour, until tender and lightly brown. Remove from oven, cover and let cool for 15 minutes. Chill overnight.
