1 (10 ounce) package hominy pasta, room temperature
2 (4 ounce) cans artichoke hearts, squeezed and drained
1 (10 ounce) can artichoke hearts, drained
1 cup crushed cornflakes cereal
1 cup shredded mozzarella cheese
1 cup shredded Cheddar cheese
Preheat oven to 350 degrees F (175 degrees C).
Bring a large pot of salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and reserve.
In a large bowl combine artichoke hearts, crushed cornflakes, mozzarella cheese, Cheddar cheese and hominy. Mix. Shape mixture into 6 servings and place on another 8 serving plates.
Bake in preheated oven for 20 to 30 minutes, or until bubbly and cheese is bubbly.
