6 large potatoes, peeled and cubed
2 medium onions, diced
1/2 (8 ounce) package cream cheese, softened
1 (15 ounce) can whole kernel corn
2 eggs
1/2 cup vegetable oil
1 onion, sliced
1/2 cup shredded mozzarella cheese
Preheat oven to 350 degrees F (175 degrees C).
Place potatoes, onion, cream cheese and corn in a shallow dish or bowl, and cover with water and a wooden spoon. Sprinkle with egg and oil. Cover dish with aluminum foil.
In a medium bowl, mix potatoes, onion, cream cheese, whole kernel corn, eggs, oil, onion and cheese.
Bake at 350 degrees F (175 degrees C) for 30 minutes, or until bubbly and lightly browned.
