Ice Cream of Barbados Recipe

Ingredients

2 1/4 cups full fat coconut milk

1 1/2 cups white sugar

3 eggs

2 teaspoons vanilla extract

1 teaspoon salt

1/2 teaspoon vanilla extract

2 1/2 cups evaporated milk

2 tablespoons vanilla extract

1 teaspoon vanilla extract

1 cup whipped cream, chilled

Directions

In a large bowl, mix full fat coconut milk, sugar, eggs, vanilla extract, salt, evaporated milk, and vanilla extract. Beat until well blended. Pour mixture into prepared pan. Let stand, refrigerate overnight.

Bake at 325 degrees for 8 hours, warmed. Cool completely. Serve chilled or pour into individual serving glasses.

Just Made this There.....I was lazy and didn't have any pretzels so I threw this recipe right into my sandwich machine and kneaded it til it was perfection. No topping, just hummus, sour cream, and blue cheese. Pretty darn good, eh?
