1/3 cup vegetable oil
2 eggs
3/4 cup poppy seeds
1/2 cup packed light brown sugar
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
In a large bowl, cream together the oil, eggs and poppy seeds until smooth. Stir in brown sugar, 1 teaspoon vanilla and flour. Mix until smooth. Fold in the remaining ingredients. Shape dough into 1 inch balls. Place on an ungreased cookie sheet.
Bake for 15 to 20 minutes in the preheated oven, until brown on both sides. Remove from cookie sheet to wire rack. Cool completely, store tightly covered in an airtight container.
