1/2 cup butter or margarine, softened
1/2 cup white sugar
1/2 cup corn syrup
2 (3 ounce) packages instant vanilla pudding mix
1 cup packed brown sugar
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup flaked coconut
1/3 cup powdered orange juice
1 teaspoon ground cinnamon
1 cup chopped pecans
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 (9 inch) muffin cups or line with paper muffin liners.
In a large bowl, cream together the butter, white sugar, corn syrup and pudding mix until smooth. Mix in brown sugar, flour, baking powder, salt and coconut. Stir in vanilla flavor gelatin. Fold in sliced pecans. Spoon mixture into prepared muffin liners.
Bake in the preheated oven for 25 minutes. Allow to cool.
