1/2 cup butter
3 tablespoons white sugar
1 cup lower fat milk
1 1/2 teaspoons lemon zest
2 tablespoons lemon juice
1 egg
1 teaspoon lemon zest
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon vanilla extract
1 cup chopped walnuts
3 1/2 cups chopped pecans
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, butter or margarine and sugar mix thoroughly. Stir in the milk, lemon zest, lemon juice and egg; mix well. Mix in the flour, baking powder, salt, vanilla extract and chopped nuts. Stir until thoroughly blended. Pour mixture into pie crust.
Bake in preheated oven for 30 minutes. Reduce heat to 350 degrees F (175 degrees C) and continue baking for 30 minutes, or until center of pie is set. Cool in pan on wire rack. Chill in refrigerator. Cut into squares.
