1 cup margarine
1/4 cup margarine
1 tablespoon granulated sugar
1 tablespoon lemon juice
1 1/2 teaspoons salt
1/2 teaspoon ground cinnamon
1 teaspoon vanilla extract
3 eggs
1 teaspoon lemon zest
1 cup chopped pecans
Preheat oven to 350 degrees F (175 degrees C).
In a 9 inch round cake pan, grease the pan. In a saucepan, melt butter, margarine and sugar over medium heat. Bring to a slow boil, stirring constantly. Remove from heat and stir in lemon juice, lemon juice and salt. Reduce heat to low.
Remove pastry from pan and place under water to slow its melting. Remove from water and keep warm on wire rack.
In a small bowl, mix eggs, lemon zest and pecans. Place mixture over drained filling and sprinkle with pecans. Bake in preheated oven for 30 minutes.
