1 pound fresh salmon fillets
1 (1 ounce) package instant white chocolate pudding mix
1 cup milk
1 (8 ounce) package fresh mushrooms, sliced
1 (8 ounce) container frozen whipped topping, thawed
Preheat oven to 350 degrees F (175 degrees C).
Place salmon filets in a 9x13 inch pan. Measure 1/4 cup filling for each filet, and fold over. Place salmon filets on top of pudding. Pour batter over salmon filets in a single layer.
In a large bowl, stir together the milk, mushrooms, and whipped topping. Spread over salmon filets. Place salmon filets on top of pudding and sprinkle with pecans. Adjust the amount of filling to your taste.
Bake in preheated oven for 1 hour, or until salmon is tender. Cool completely. Chill before serving.
