1 cup shortening
1 1/3 cups boiling water
3/4 cup white sugar
1 egg
1 teaspoon vanilla extract
1 1/2 teaspoons milk powder
1 cup all-purpose flour
2/3 cup packed light brown sugar
1 tablespoon butter, softened
1 teaspoon rum flavored extract
1 cup rolled oats
1 cup raisins
1 cup cranberry sauce
1/4 cup chopped walnuts
Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets.
In a large bowl, cream together shortening, boiling water and white sugar until light and fluffy. Beat in egg, then stir in vanilla, milk powder, flour and brown sugar. Mix together, then stir in raisins, cranberry sauce and walnuts. Drop by tablespoonfuls on the prepared cookie sheet.
Bake for 12 to 15 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
