5 eggs, room temperature
1 pound butter
2 teaspoons baking soda
1 cup white sugar
6 tablespoons milk
3/4 cup vegetable oil
1 cup all-purpose flour
1 teaspoon baking powder
2 teaspoons lemon zest
3 tablespoons lemon juice
1 cup fresh lemon juice
2 cups white sugar
1 teaspoon vanilla extract
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 (8 ounce) loaf pans.
In a large bowl, beat together eggs, butter, baking soda, sugar, milk, vegetable oil, flour, baking powder and lemon zest. Mix well, then gently mix flour, baking soda and lemon zest into egg mixture. Stir lemon mixture into flour mixture until well blended. Fold in the sugar and lemon mixture. Pour batter into prepared pans.
Bake in preheated oven for 40 minutes, or until a toothpick inserted into center of each pan comes out clean.
