2 medium potatoes, peeled and cubed
1 medium onion, peeled and chopped
1/2 cup water
3 tablespoons olive oil
1 cup all-purpose flour
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
1/4 teaspoon dried rosemary
1/8 teaspoon salt
1 dash ground black pepper
1/8 teaspoon dried rosemary
Bring a large pot of water to a boil. Add potatoes, onion and water and cook until potatoes are still slightly yellowish.
Stir in olive oil, flour, oregano, basil, rosemary, salt, pepper. Bring to a boil, stirring frequently. Continue stirring until mixture is thickened, about 10 minutes.
Remove from heat and stir in salt, pepper, rosemary and salt of pepper. Heat for about 5 minutes, stirring occasionally.
