1 tablespoon vegetable oil
10 red bell peppers, peeled and separated
1 spaghetti
1 small onion, chopped
2 cloves garlic, minced
1 (10 ounce) package taco seasoning mix (optional)
1 teaspoon dried black pepper
1 small head Bay leaf lettuce, rinsed and shredded
1 medium head broccoli, cut into 1 ounce florets
Heat oil in a medium skillet over medium heat. Add peppers; cook, stirring occasionally, for 5 to 10 minutes or until just tender. Stir in spaghetti, onion and garlic. Simmer for about 1 minute, stirring constantly. Reduce heat to low; remove from heat and add seasoning mix.
Add bay leaf and broccoli to pan. Pour sauce over vegetables and blend. Cover and let stand for at 30 minutes. Cool and refrigerate for at least one hour.
