1 tablespoon vegetable oil
1 1/2 teaspoons ground ginger
1 1/2 teaspoons lemon juice
1 teaspoon juniper berries
1 teaspoon dried sage
1/4 teaspoon salt
1/4 teaspoon dried oregano
1/4 teaspoon dry mustard
1/8 cup honey
In a small bowl mix together oil, ginger, lemon juice, berries, sage, salt, oregano, mustard and honey. Place two chicken halves in the pans they've been placed on.
Heat oil in large glass skillet over medium-high heat, pour remaining 2 tablespoons oil in skillet, bring out just between the edges. The oil should just keep on frying the chicken while it cooks down. Fry 20 to 25 minutes, turning once, or until chicken is hot on each side and the center of the breasts turn brown on each side. Cool 5 minutes, place chicken in serving dish, and place next side down.
