Fettuccine Italia Recipe

Ingredients

1 cup butter

5 tablespoons all-purpose flour

1 teaspoon white sugar

1 (8 ounce) package kielbasa sausage (with pork)

3 cloves garlic, minced

1 1/2 tablespoons olive oil

salt and pepper to taste

1 medium tomato, diced

1 (10 ounce) package frozen chopped spinach

1/4 cup shredded mozzarella cheese

1 tablespoon Italian seasoning

Directions

Melt butter in a large skillet over medium heat; stir in flour and sugar. Cook for about 10 minutes or until the flour is thoroughly combined with cold water disappears. Place sausage in the skillet.

Melt butter in a small saucepan over medium heat. Cook, stirring frequently, to melt margarine. Stir over medium heat, then stir in sugar. Bring to a simmer.

Lightly oil a large skillet.

Spread batter on skillet. Sprinkle with 1 1/2 cups kielbasa; spoon layer of sausage over bottom of skillet. Repeat layering with tomato, spinach, mozzarella cheese and Italian seasoning. Cook, stirring constantly, for 2 2/3 minutes or until sauce thickens. Serve warm, or chill in refrigerator.

I added frozen veggies, a little more broth, and served it over chicken rice-a-roni---absolutely delicious! It was so easy to make, fast and tasty. I wish we had bought more than one pound of red potatoes for this---we had some great fresh yellow squash, and the texture and color were beautiful. My husband and I loved it, and he said he would buy the next batch of soups and salads just based on the recipe. Thanks for sharing.
