4 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 cup white sugar
1 teaspoon lemon zest
1 cup vegetable oil
1 (18 ounce) can lemon flavored Jell-O mix
1/4 cup lemon sherbet
Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
In a large bowl, stir together the flour, baking powder, baking soda and sugar. Mix with lemon zest, oil, lemon sherbet and lemon flavored gelatin. Drop dough by tablespoonfuls onto the cookie sheets.
Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 8 minutes before removing to a wire rack to cool completely.
