1/2 cup butter, softened
1/2 cup packed brown sugar
1 egg, lightly beaten
1 teaspoon vanilla extract
1 teaspoon lemon juice
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon salt
1 cup chopped pecans
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a medium bowl, cream together the butter, brown sugar, egg, and vanilla until smooth. Combine the flour, baking soda, cinnamon, and salt; mix into the creamed mixture until well blended. Roll the dough into 1/2 inch balls. Place the cookies 1 inch apart onto the cookie sheet.
Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack.
