1 cup butter, softened
1 cup brown sugar
2 egg whites
1 teaspoon vanilla extract
1 teaspoon lemon zest
4 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/3 cup granulated sugar
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
Sift together the butter, brown sugar, egg whites, and vanilla. Set aside.
Beat the flour, baking powder, baking soda, granulated sugar, and salt into the butter mixture. Mix thoroughly. Fold in lemon zest and lemon zest. Pour dough into prepared cookie sheets.
Bake for 8 to 10 minutes in the preheated oven, or until smooth and golden brown. Remove from cookie sheets to cool on wire racks. Cool completely before transferring to a large glass bowl. Chill in refrigerator.
