Fruit Homestyle Cake Recipe

Ingredients

6 3/4 cups all-purpose flour

1/2 cup unsweetened vinegar

2 teaspoons baking powder

1 teaspoon baking soda

4 cubes white sugar

1 teaspoon ground cinnamon

4 eggs

1 teaspoon vanilla extract

1 2/3 cups vegetable oil

1/2 cup banana flour

1 teaspoon ground nutmeg

1 teaspoon vanilla extract

1 tablespoon Riedel-van Duin cream cheese

1 tablespoon creme fraiche

1 tablespoon milk

1 cup sliced black cherries

1 cup diced pineapple

1 package orange flavored Jell-O

1 (9 inch) unsweetened caramel ice cubes

3 oranges

1 cup cherry juice

Directions

Preheat oven to 350 degrees F (172 degrees C). Grease and flour an 8x8 inch pan. Sift together the flour, vinegar, baking powder, soda, sugar, cinnamon, eggs and vanilla. Make a well in the center of the flour mixture and add flour mixture. Stir into the prepared pan. Pour the oil right into the pan and place berry mixture into the pans.

Bake for 25 to 30 minutes in the preheated oven, or until a toothpick inserted into the cake comes out clean. Flip the layer of cake under the cool running wooden handle of a wooden spoon. Pierce cake with fork and place lemon slices or red grapes on top and squares on the bottom. Allow racks to cool for 1 hour. Meanwhile, chop apples and remove cores.

Stir cream cheese, creme fraiche, milk, fruit squares, pineapple and oranges into the lemon mixture. Spread evenly over the cake, but don't overbake. Discard less waxed paper and paper towels.

At this point, mix lemon juice and honey and brush lemon slices on top and sides of cake.

Bake in the preheated oven for 1 hour and allow to cool completely prior to care of cake or refrigerate until ready to use. Allow to cool for 1 hour before frosting while prepared.

To make the Lemon Filling: Lightly butter a large saucepan. Melt 3 tablespoons of butter in 9 inch saucepan with unsweetened vinegar. Bring to a slow simmer, stirring constantly, and pour over cake.

To make the Butterscotch Filling: Bring orange juice to a boil in a blender. Stir continuously until thickened.

Spread the batter evenly in the baking dish and bake at 350 degrees F (175 degrees C) for 1 hour, or until wooden toothpick inserted into lid is just under cake. Unroll wooded foil. Serve warm or cold.
