1 cup white sugar
1/4 cup baking soda
1/4 cup vegetable oil
2 eggs
1 1/3 cups all-purpose flour
2 cups corn syrup
1 cup evaporated milk
In the microwave or in a large bowl lightly smooth, microwave-heat sugar; when softened, pour into the microwave bowl. Microwave 1 minute, turning from side to side. Spread half of the molasses over the top of the cookie.
Meanwhile, in a small bowl, mix baking soda and oil. In a saucepan, heat syrup syrup over medium heat. Pour over molasses mixture to coat.
Bake for 2 minutes in the preheated oven. Remove from oven and brush with egg wash and sauce mixture. Bake for 1 minute.
Remove from cookie sheets to wire racks to cool completely. Spread syrup evenly over cookie in racks and refrigerate. Refrigerate for at least 2 hours and up to 24 hours to chill completely.
Good recipe. It's a good mix of flavors. It would have added more though. I used milk of magnesia, I don't know if this would have made a little more. That being said, who cares? It was super easy and quick. One suggestion--put white sugar on top after baking.
