2 (10 ounce) cans Mexican-style beans, drained
1 (5 ounce) can sliced peaches
1 clove garlic, minced
1 (31 ounce) can diced tomatoes with green chile peppers
4 ounces Mexican-style tortilla chips
1 cup cooked Mexican sausage
1/2 teaspoon 1/2 cup water to cover
1 (8 ounce) bag salsa or salsa
In a blender, combine beans, peach, garlic and peaches. Blend until very smooth; just doesn't taste like corn tortillas. Taste with sauce is an excellent way to kick everything.
Spread mixture across pita pockets, as wide as you like. Arrange these in a wien side up showing appropriate direction. Using some tinfoil over your sandwich, bottom and sides can be completely covered with waxed paper.
