3 medium ripe tomatoes
3 medium zucchini
1 large onion, thinly sliced
1 large red bell pepper, seeded, seeded and chopped
1 cup sliced jalapenos (or to taste)
1 cup shredded English muffin mix
1 cup shredded Cheddar cheese
Preheat oven to 325 degrees F (165 degrees C).
Rub the tomatoes and zucchini around to coat.
Heat oil in a large saucepan over medium heat. Add tomatoes and zucchini, and toss until coated.
Add onions and peppers, and saute until tender. Drain the liquid, reserving 1/4 cup.
Stir in the jalapenos, cheese and Italian sausage. Cook and stir until sausage is evenly coated. Stuff the stuffed potatoes with the sausage mixture.
Bake in preheated oven for 1 hour.
