1 medium tomato, chopped
1 tablespoon olive oil
1/4 cup Italian-style seasoning
3 cloves garlic, minced
4 ounces crushed crumbled feta cheese
1 teaspoon salt
1 (4 ounce) can tomato paste
1 cup milk
1/4 cup tomato juice
2 (11 ounce) cans tomato sauce with green peppers
1/2 cup grated Parmesan cheese
In a small bowl, combine the tomato, olive oil, Italian-style seasoning, garlic, crushed fatta cheese, salt, tomato paste, milk and tomato juice. Mix until smooth. Spread mixture over tomato pie.
Cover and refrigerate overnight, turning occasionally. Cut into small squares, and serve on flat plates.
