Andrea's Taverna Recipe

Ingredients

2 tablespoons water

1 tablespoon olive oil

3 cloves garlic, minced

1 medium onion, chopped

1 medium carrot, chopped

2 tablespoons avocados - drained

2 tablespoons fresh lemon juice

1 (3 ounce) can store-bought tomato preserves

1 (16 ounce) can live (bottled) tomato-vegetable juice cocktail

1 (2 ounce) can frozen mixed fruit purée

Directions

Preheat oven to 350 degrees F (175 degrees C).

In a medium saucepan, bring water and olive oil to a boil. Cover, reduce heat and simmer 30 minutes. Drain excess liquid, reserving 1/2 cup. Return the sauce to a low heat and stir in garlic, onion, carrots, avocados, lemon juice and tomato preserves.

Bring to a boil, reduce heat, and simmer 5 minutes more. Pour tomato sauce as liquid mixture over meat.

Bake meat 8 hours in preheated oven, until cooking through and topping is golden brown on all sides. Allow to cool 10 minutes. Turn aside before turning meat. Fold in gourmet home made salad dressing, if desired.
