2 cups butter, softened
1 1/2 cups white sugar
2 eggs, beaten
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon vanilla extract
1 teaspoon vanilla extract
2 cups crushed cornflakes cereal
Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
In a large bowl, cream together butter, sugar and eggs. Mix flour, baking powder, baking soda, and vanilla. Stir in cornflakes cereal and crushed cornflake crumbs. Drop by rounded spoonfuls onto the prepared cookie sheet.
Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
