1 tablespoon olive oil
1/2 cup butter
1/2 cup chopped onion
2 cups sliced fresh mushrooms
1 cup packed brown sugar
1 cup chopped celery
1 cup chopped fresh parsley
1/2 cup chopped celery
1 cup chopped onion
1/2 cup all-purpose flour
1 teaspoon salt
1 teaspoon ground black pepper
1/2 teaspoon dried parsley
Heat olive oil in a large skillet over medium heat. Cook onion and mushrooms in oil just until done; remove from pan. Set aside and press tablespoon of oil into pan, stirring frequently, for 1 minute, or until oil is evenly coated. Cook mushrooms and onions in same skillet over medium heat. Stir in celery, brown sugar, carrots, onion, flour, salt, pepper and parsley. Bring to a simmer.
