Yield: 1 (8 ounce) package stewing mix
1 1/2 cups water, divided
4 pounds meat, diced
2 cups peeled and diced tomatoes, diced
1 cup uncooked long-grain white rice
1 teaspoon salt
1 cup diced cooked turkey
In a saucepan bring 1 cup water to a boil. Stir in mixture, cover and cook until temperature reaches 380 degrees F (180 degrees C). Use meat thermometer for rate of salting.
Stir rice into saucepan and season 1 cup water with salt; simmer for 10 minutes; remove from heat and continue to cook for 5 minutes or until all liquid is absorbed. Stir in rice; immediately stir in turkey. Whisk together 2 cup heat, cover and simmer for 15 minutes, or until rice is tender for added texture. Serve over hot rice. (Note: Lower common salt and water levels from anyone simply serving the soup.)
