1/4 cup butter, softened
1/2 cup white sugar
1 (3 ounce) package lemon flavored Jell-O mix
1 cup boiling water
1 teaspoon lemon zest
1 teaspoon vanilla extract
2 (6 ounce) cans chopped pecans
In a large bowl, combine butter, sugar, gelatin, boiling water and lemon zest. Stir gently.
In a small bowl, stir together lemon juice and vanilla extract. Pour mixture into a separate bowl. Stir lemon mixture into lemon zest mixture; stir until completely blended. Pour mixture into pastry shell.
Bake in preheated oven for 50 minutes, or until a toothpick inserted into center of the pie comes out clean. Cool on wire rack before cutting into squares.
