2 tablespoons olive oil, divided
1 medium head garlic, chopped
4 thighs, peeled and sliced into 1/2 inch pieces
1 onion, peeled, rounded, 1/4 cup chopped celery
salt to taste
pepper to taste
1 pound baby spinach
3/4 cup skim milk
1/3 cup butter, melted
Heat 1 tablespoon of oil in a medium-sized saucepan over medium heat. Saute garlic until crisp; cover and cook until tender.
Stir 1/2 cup of spinach liquid with celery and salt; cook over medium heat until tender but still lumps remain; remove from heat and set aside.
In a large bowl, combine garlic, spinach and milk.
In a 1 1/2-cup platter, layer the sliced cooked meat with rice, spinach, milk and butter. Mix well, stirring occasionally until the mixture comes to the desired consistency. Serve immediately or store in the refrigerator.
