1 pound lean beef loin
1 onion, sliced into 1/4 inch slices
1 1/2 tablespoons vegetable oil
1/2 cup water
8 slices Cheddar cheese, shredded
8 slices American cheese, shredded or as desired
2 teaspoons Worcestershire sauce
2 teaspoons black pepper
2 teaspoons garlic powder
2 scoops Dijon mustard
1/2 tablespoon smoked gherkin
1/2 teaspoon salt
Place the pork loin in a large, non-metal skillet. Place the onion slices over the pork. Sprinkle oil and water over both sides of pork, then pour the water into the skillet. Cover, and simmer over high heat for 30 minutes.
While the pork is heating, place the cheese, American cheese, Worcestershire sauce, black pepper, garlic powder and sliced onion into the skillet. Stirring well, cook and stir until well coated. Remove pork from skillet, and place in a separate large bowl.
While the pork is heating, remove from the skillet and set aside. Place the cheese into the skillet over medium heat. Place sliced onion slices over the sauce mixture in the skillet. Sprinkle with Worcestershire sauce, then spoon some over the pork. Cover, and simmer for half hour. Remove the pork from the skillet, and place in a large pot. Brush with 1/4 cup of the buttery brown gravy or butter, and sprinkle with additional cheese.
When the pork is warm, remove the pork rack and place in a large pot. Cover, and cook over medium heat for 45 minutes to 1 hour. Remove pork from the pot, and set aside to cool.
Remove the pork from the pot, place it in the pot, and stir in the buttery brown gravy. Add the cheese and onions over the pot. Mix until all is well blended. Top with pork loin and cheese mixture and garnish with bacon or ham slices.
