1/2 cup butter, softened
1/4 cup all-purpose flour
1 tablespoon milk
1/4 cup mayonnaise
2 pounds skinless, boneless chicken breast halves
Preheat oven to 350 degrees F (175 degrees C).
Melt butter in a medium saucepan. Place flour in a shallow dish or bowl and sprinkle with milk. Mix well until well blended. Place chicken in a large, nonstick skillet, and sear 2 inches off the bottom and sides. Remove from skillet, and cut into thin strips.
Heat butter in the microwave or in a large skillet over medium heat. Cook chicken strips in butter until golden brown. Place strips on a baking sheet.
Bake uncovered at 350 degrees F (175 degrees C) for 45 minutes. Turn chicken rolls over and bake an additional 5 minutes, or until golden brown. Remove from oven and allow to cool. Meanwhile, cut up into 1 inch cubes and serve with gravy.
